Baked Red and White Potatoes

  • 2 pounds small red and white potato, quartered
  • 2 Tablespoons extra-virgin olive oil
  • 1/2 to 1 teaspoon Herbes de Provence Blend
  • 2 cloves garlic, minced
  • ground black pepper

Preheat oven to 400 degrees F.

Toss potatoes in a bowl with the rest of the ingredients until completely coated. Spread on baking pan.  
Bake until fork tender, about 45 minutes.
