Chicken Adobo Recipe

Ingredients:
• 3 lb. chicken combo of thighs, drumsticks and wings (or any of your fave chicken parts)
• 1/4 cup vinegar
• 1 Tablespoon Kalamansi juice or lemon juice
• 1/4 cup soy sauce
• 3 cloves garlic, crushed
• 1/2 teaspoon Hawaiian Red Salt
• 1/4 teaspoon peppercorns, crushed
• 1 bay leaf, crushed
• 2/3 cup water
In a saucepan, combine all ingredients. Bring to a boil. Cover, lower heat, and simmer for 30 to 45 minutes.
Remove cover and simmer 15 more minutes or until sauce thickens and chicken is lightly browned.
Serve with rice. Makes six servings.
